You would be forgiven for thinking that Mexico’s preferred tequila-based cocktail was the Margarita. It is certainly the tequila drink of choice in the US, and probably in the UK too.
However, you would be mistaken – it seems that the top tequila tipple in Mexico is actually the Paloma, Spanish for ‘dove’.
- 50ml Calle 23 Tequila
- 50ml Fresh Lime Juice
- Grapefruit Soda (I use Ting)
Fill a jam-jar with cubed ice, add tequila and lime juice, and then top up with Ting to taste. You can balance the tequila, lime and soda depending on whether you want a short and powerful cocktail, or a longer, more refreshing drink. The grapefruit lightens the cocktail, and stops it from becoming overly sweet.
